Food for the future, made the old way.

VESA began with one stubborn belief: you should never have to choose between food that's good for you and food that's genuinely exciting to eat.

We kept everything that makes food joyful. And changed almost everything else.

The story, unfolded

    A simple question

    Why does food that's good for you so often taste like a compromise? We couldn't find a good answer, so we started cooking one.

    Chapter 02

    Into the kitchen

    Late nights in a small Bangalore kitchen. Hundreds of test batches, notebooks full of failures, and a few recipes that made everyone at the table go quiet.

    Chapter 03

    Discovering fermentation

    Koji, cultured chillies, slow ferments. The oldest technique in food turned out to be the most modern: deeper flavour, better digestion, less sugar needed.

    Looking to the future

    Twenty recipes, released slowly and only when they're ready. Food that feels familiar to an Indian palate, with ideas borrowed from the whole world.

Our philosophy

The world's pantry, the Indian palate.

We travel for ingredients: a smoky citrus from Oman, a quiet ferment from Japan, a tart fruit from Southern Africa, a creamy nut from Korea. Then we bring them home and ask one question: would this make sense on an Indian table?

The answer has to be yes. Familiar enough to love on the first bite, new enough to remember.
